Stuffed Shells
Meet the pasta recipe that had almost 300k views! This easy recipe is a childhood favorite of mine and truly perfect for the whole family! If you have a smaller baking dish, make a single serving and cut the recipe. Or make the whole thing and freeze in containers. PS: it’s also FILLED with greens (basil & spinach)
Ingredients:
1 box jumbo pasta shells
1 tbsp olive oil
2 tsp fresh garlic, minced
5 cups fresh chopped spinach
1/2 cup + 1/4 part skim ricotta cheese
1/2 cup part skim mozzarella cheese
1/4 cup grated Parmesan cheese, plus more for serving
1 large egg
2 tbsp fresh basil, finely chopped
salt pepper & red pepper flakes to taste
1 large jar marinara sauce

Directions:
Preheat the oven to 375 degrees F.
Cook the pasta al dente and let cool
Add chopped garlic to pan and cook in olive oil then sauté spinach
Let cool
In a mixing bowl, stir together the spinach, ricotta, mozzarella, parmesan, egg, basil and salt and pepper (don't over mix)
Line a shallow dish with sauce (about 1/3 cup)
Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish.
Add the rest of the sauce and bake covered with aluminum foil for 25 minutes.
Remove the foil and continue baking for 10-15 minutes and broil for 5!
