Banana Muffins
These are my favorite high fiber muffins for meal prep. They are super filling, delicious and healthy! I hope you love them as much as I do.
Ingredients:
This recipe yields 3-4 muffins, I prefer to make single serving recipes. You can double or triple the recipe for meal prep.
1 small banana
1 egg
1 egg white
3 GG crackers pulverized or 1/3 cup wheat bran
1 tbsp dark chocolate chips
1 tsp baking powder

Directions:
Mash banana with a fork
Mix wet ingredients then dry ingredients
Bake in greased muffin tray at 350 degrees for 25 mins
