Banana Muffins

These are my favorite high fiber muffins for meal prep. They are super filling, delicious and healthy! I hope you love them as much as I do.

Ingredients:

This recipe yields 3-4 muffins, I prefer to make single serving recipes. You can double or triple the recipe for meal prep.

  • 1 small banana

  • 1 egg

  • 1 egg white 

  • 3 GG crackers pulverized or 1/3 cup wheat bran

  • 1 tbsp dark chocolate chips

  • 1 tsp baking powder

Tools Needed:

Directions:

  • Mash banana with a fork 

  • Mix wet ingredients then dry ingredients

  • Bake in greased muffin tray at 350  degrees for 25 mins
