Crispy Smashed Potatoes
If you really want to impress someone, or just impress yourself you neeeeed to try these potatoes. Followed along @thedairyfreedigest recipe video and it was super easy to make!
Ingredients:
small potatoes
olive oil
parsley
flakey sea salt
Tools Needed:
Directions:
Boil small potatoes in water until they are soft enough to easily stick a fork through (about 20-25 mins)
Strain the potatoes from the water and let cool about 5 minutes
Use the back of a cup or fork to lightly smash each potato
Use a silicone brush and brush each potato with olive oil and sprinkle with salt and pepper
Bake in oven at 425 degrees for 20 - 25 mins then flip them & continue cooking until they are at your desired level of crispness
Season with fresh parsley, flakey sea and and a little parmesan cheese
